Memory Matters’ volunteer chef, Kim Baretta, encourages incorporating more fresh vegetables, fruits, whole grains, legumes, and nuts into your meals. She favors olive oil for baking and sautéing, using fresh herbs, dried spices, garlic, and citrus juice to add flavor—while keeping salt to a minimum. For protein, she recommends fish and seafood, in line with Mayo Clinic guidelines that suggest limiting red meat to just twice a month.
