Turkey, Wild Rice & White Bean Soup
This soup is Thanksgiving dinner in a bowl! The herbs and turkey truly make your kitchen smell like November. Plus, the beans and wild rice make it super healthy. It’s perfect for a cold winter day.
Serves 6-8​

Ingredients
2 Tablespoons extra virgin olive oil
½ cup water
1 large onion, finely diced
3 medium carrots, finely diced
4 celery stalks, finely diced
1 pound ground turkey
¾ cups dry white wine
8 cups low sodium chicken stock
1 teaspoon Kosher salt
¾ teaspoon ground pepper
½ cup wild rice or mixed wild rice
1 Tablespoon rosemary, finely chopped
1 Tablespoon thyme, finely chopped
1 Tablespoon sage, finely chopped
3 Tablespoons low sodium soy sauce
½ teaspoon cayenne
½ teaspoon garlic powder
2 cans Great Northern beans, well rinsed
Instructions
1. Heat the olive oil and water in a large pot.
2. Add onions, carrots, and celery and cover and simmer on low heat until the vegetables are soft…about 30 minutes.
3. Add ground turkey and cook on medium heat until cooked through.
4. Add the wine and cook until liquid has evaporated.
5. Add stock, salt, pepper , rice, rosemary, thyme, and sage.
6. Bring to a boil.
7. Add soy sauce, cayenne, garlic powder and simmer for 20-30 minutes, until rice is tender.
8. Add beans and warm until beans are hot, about 10 minutes.
9. Serve and enjoy!
