Arugula and Parmesan Salad
Serves 4

4 handfuls baby arugula leaves
Parmesan shavings
8 sundried tomato halves, julienned (cut in strips)
1 lemon
Extra virgin olive oil
​
Method:
Place arugula on plate.
Top with parmesan shavings and sundried tomato strips.
Squeeze fresh lemon juice over the top and drizzle with olive oil.
Season with salt and pepper.
